PANCAKES

Prep Time: 10 mins | Cook Time: 10 mins | Total Time: 20 mins

Ingredients:

  • 2 cups flour

  • 1/2 tbsp baking powder

  • 6 tbsp sugar

  • 1/2 tsp salt

  • 6 large eggs, separated

  • 6 tbsp melted butter

  • 1/2 tsp vanilla extract

Directions:

  1. Add all dry ingredients into a large bowl (flour, baking powder, sugar, and salt)

  2. In a separate bowl, whisk the yolks, milk, melted butter, and vanilla until combined.

  3. Combine the wet with the dry ingredients until you form a batter.

  4. Whip the egg whites in a bowl until they reach medium peaks.

  5. Gently mix half the whipped egg whites into the batter, then fold in the remaining half. (Note - your batter should be a little lumpy and you should have large parts of egg whites not fully incorporated)

  6. Heat your griddle and grease with butter or with non-stick spray.

  7. Drop about 4 tbsp or 1/4 cup of batter onto the griddle and let cook.

  8. Top with any desired toppings: chocolate chips, blueberries, bananas ect.

  9. When the bottom looks golden brown, flip, cook on the other side till golden brown, then remove from griddle.

  10. Top pancakes with butter, maple syrup, or any other desired toppings.

  11. Enjoy!

Notes:

*This recipe makes about 8 to 10 pancakes. You can double or half the ingredients to your preference.
