3-INGREDIENT SAMOAS COOKIES

*vegan, dairy-free, gluten-free

Ingredients:

  • 2-3 ripe bananas (if your bananas are smaller, use 3)

  • 1 cup unsweetened shredded coconut

  • 1/2 cup chocolate chips

  • vanilla *optional

  • cinnamon *optional

  • salt *optional

Directions:

  1. Preheat oven to 350 degrees.

  2. Line a baking sheet with parchment paper and add coconut.

  3. Place coconut in thee oven for about 5 minutes or until coconut is golden brown. Make sure the coconut does not burn.

  4. In a medium bowl, mash your bananas, add in cooled, golden coconut and combine.

  5. Add a splash of vanilla, cinnamon, and/or salt (about 1/4 tsp each) *optional - depends on how sweet you want your cookies!

  6. Once dough is well combined, use your hands to form small discs.

  7. Add discs to your lined baking sheet and use your hands to flatten the cookies.

  8. Use a chopstick or your finger to create a small hole in the center of the discs.

  9. Place cookie sheet in the oven for about 15-20 minutes or until the cookies are golden.

  10. Remove from the oven and allow to cool.

  11. While the cookies are cooling, melt your chocolate chips.

  12. Then dip the bottoms of the cookies into the melted chocolate, place back on the lined cookie sheet, and then drizzle the tops with more melted chocolate.

  13. Place in the fridge or freezer for about a hour.

  14. Enjoy!
