CINNAMON ROLL MUG CAKE
*vegan, dairy-free

Ingredients:
Dough:
4 tbsp flour
2 tbsp unsweetened almond milk
½ tsp brown sugar
½ tsp baking powder
Pinch of salt
Pinch of cinnamon
Filling:
1 tsp maple syrup or butter
2 tsp brown sugar
Pinch of cinnamon
Pinch of salt
Icing:
1 tbsp powdered sugar
Splash of almond milk
Directions:
In a bowl, add flour, cinnamon, baking powder, salt, and sugar and mix.
Add in milk and mix together until you begin to form a dough.
With your hands, knead dough for about 1-2 minutes.
If the dough is too dry, add a splash of almond milk and if the dough is too wet, add a pinch of flour.
Let dough sit for a minute.
Lightly flour a flat surface and begin to flatten dough until you form a rectangle.
Lighty spread either the maple syrup or the butter over the surface of the dough.
Sprinkle brown sugar, cinnamon, and salt over the surface.
Using a spoon, evenly spread the cinnamon mixture over the dough.
Starting at the end of the rectangle, begin rolling the dough to form a log shape.
Cut log into 4 even pieces.
Take pieces and place into a mug (or a microwavable dish).
Place the mug in the microwave and cook for 30 seconds.
Open the microwave and let cool for a second.
Close the microwave door and let cook for another 30 seconds.
Let cool.
In a small bowl make icing: combine powdered sugar and almond milk.
Once cooled, drizzle icing and enjoy!
