CINNAMON ROLL MUG CAKE

*vegan, dairy-free

Ingredients:

Dough:

  • 4 tbsp flour

  • 2 tbsp unsweetened almond milk

  • ½ tsp brown sugar

  • ½ tsp baking powder

  • Pinch of salt

  • Pinch of cinnamon

Filling:

  • 1 tsp maple syrup or butter

  • 2 tsp brown sugar

  • Pinch of cinnamon

  • Pinch of salt

Icing:

  • 1 tbsp powdered sugar

  • Splash of almond milk

Directions:

  1. In a bowl, add flour, cinnamon, baking powder, salt, and sugar and mix.

  2. Add in milk and mix together until you begin to form a dough. 

  3. With your hands, knead dough for about 1-2 minutes.

  4. If the dough is too dry, add a splash of almond milk and if the dough is too wet, add a pinch of flour. 

  5. Let dough sit for a minute.

  6. Lightly flour a flat surface and begin to flatten dough until you form a rectangle. 

  7. Lighty spread either the maple syrup or the butter over the surface of the dough.

  8. Sprinkle brown sugar, cinnamon, and salt over the surface.

  9. Using a spoon, evenly spread the cinnamon mixture over the dough.

  10. Starting at the end of the rectangle, begin rolling the dough to form a log shape.

  11. Cut log into 4 even pieces.

  12. Take pieces and place into a mug (or a microwavable dish).

  13. Place the mug in the microwave and cook for 30 seconds.

  14. Open the microwave and let cool for a second.

  15. Close the microwave door and let cook for another 30 seconds. 

  16. Let cool.

  17. In a small bowl make icing: combine powdered sugar and almond milk.

  18. Once cooled, drizzle icing and enjoy!
