QUINOA VEGGIE SALAD
Prep Time: 15 mins | Cook Time: 15 mins | Total Time: 30 mins
Ingredients:
1/2 cup dry quinoa
1 cup of water
1 red bell pepper, chopped
1/2 red onion, chopped
1/2 large Persian cucumber, chopped
1/2 can chickpeas, rinsed and drained
1/2 cup diced tomatoes
1/2 cup carrots, chopped
2 limes *optional
Directions:
In a small pot, add your dry quinoa and water.
Place pot over medium-high heat. Let boil.
Once quinoa is boiling, lower heat to simmer/low and cover. Let cook for about 15 minutes or until fluffy.
While quinoa is cooking, chop all your vegetables.
In a bowl, combine cooked quinoa with chopped vegetables.
Season salad with salt and pepper (to taste) and squeeze limes.
Mix and enjoy!
