QUINOA VEGGIE SALAD

Prep Time: 15 mins | Cook Time: 15 mins | Total Time: 30 mins

Ingredients:

  • 1/2 cup dry quinoa

  • 1 cup of water

  • 1 red bell pepper, chopped

  • 1/2 red onion, chopped

  • 1/2 large Persian cucumber, chopped

  • 1/2 can chickpeas, rinsed and drained

  • 1/2 cup diced tomatoes

  • 1/2 cup carrots, chopped

  • 2 limes *optional

Directions:

  1. In a small pot, add your dry quinoa and water.

  2. Place pot over medium-high heat. Let boil.

  3. Once quinoa is boiling, lower heat to simmer/low and cover. Let cook for about 15 minutes or until fluffy.

  4. While quinoa is cooking, chop all your vegetables.

  5. In a bowl, combine cooked quinoa with chopped vegetables.

  6. Season salad with salt and pepper (to taste) and squeeze limes.

  7. Mix and enjoy!
