BREAKFAST POTATOES

Ingredients:

  • 2 potatoes

  • 1/4 cup finely chopped red and yellow bell peppers

  • 1/4 cup finely chopped red onion

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • dash of sugar

Directions:

  1. Microwave or boil potatoes until they are soft (time depends on method and size of the potatoes).

  2. Slice and chop potatoes into cubes.

  3. Finely chop your onion and bell peppers.

  4. Over medium to high heat, add butter and olive oil to a large skillet (can also use olive oil spray).

  5. Add onions and peppers and sprinkle with a dash of sugar (to caramelize the onions).

  6. Sauté until golden brown.

  7. Add potatoes and mix.

  8. Add seasoning.

  9. Sauté until brown.

  10. Enjoy!
