BBQ CAULIFLOWER RICE QUINOA BOWL

Ingredients:

  • 1/4 cup red bell pepper

  • 1/4 cup zucchini

  • 1/4 cup tomatoes

  • 1/4 cup carrots

  • 1/4 cup onion

  • 1/4 cup broccoli

  • 1/4 cup mushrooms

  • 1/4 cup quinoa

  • 1/2 cup water

  • 1/4 cup cauliflower rice

  • 1 -2 handfuls of spinach

  • 1 tbsp olive oil or olive oil spray

  • 1/4 tsp salt

  • 1/4 tsp pepper

  • 1/4 tsp garlic powder

  • 1/4 tsp everything but the bagel seasoning

  • 1 - 2 tbsp BBQ sauce

Directions:

  1. In a small pot, add dry quinoa and water and bring to boil.

  2. Once boiling, lower heat to simmer and cover pot with a lid.

  3. Let quinoa cook for about 15 minutes or until fluffy.

  4. On a large cutting board, slice and dice red pepper, zucchini, tomatoes, carrots, broccoli, mushrooms, and onion.

  5. Over medium to high heat, spray a large skillet with olive oil or add olive oil.

  6. Add veggies to skillet.

  7. Let veggies cook for about 2 minutes.

  8. Add cauliflower rice.

  9. Add BBQ sauce, salt, pepper, garlic powder, and everything but the bagel seasoning and mix.

  10. Continue to let the veggies cook until they are tender - about 5 minutes.

  11. In a bowl, add spinach.

  12. Once veggies are cooked, add quinoa and combine.

  13. Add veggies to your bowl with spinach and enjoy!
