GRILLED BBQ CHICKEN BOWL

*makes 4 bowls

Ingredients:

  • 1-2 tbsp olive oil or olive oil spray

  • 1 large red onion

  • 2 red bell peppers

  • 1 avocado 

  • 1 can black beans, drained and rinsed 

  • 2 pieces of corn on the cob

  • 4 boneless, skinless chicken breasts

  • ½ tsp salt 

  • ½ tsp garlic powder 

  • ½ tsp onion powder 

  • ½ tsp paprika 

  • ½ tsp pepper 

  • 2 tbsp barbecue sauce

  • 1 package (5-ounce) baby spinach

  • Sliced lime 

  • Chopped fresh cilantro (for garnish) *optional

Directions:

Chicken:

  1. Wash and dry your chicken breasts. 

  2. Place chicken on a cutting board.

  3. In a small bowl, add and mix together all your spices: salt, pepper, paprika, garlic powder, and onion powder.

  4. Pour barbecue sauce over chicken and rub all over the front side of the chicken. 

  5. Sprinkle your spices over the chicken and rub all over.

  6. Repeat the barbecue sauce and spice rub on the other side of the chicken. 

  7. Over medium to high heat, spray a large skillet with olive oil or add olive oil.

  8. Add your chicken to the pan.

  9. Let cook for about 5-7 minutes then flip.

  10. Cook on the other side for another 5-7 minutes. 

  11. Remove chicken from stove once fully cooked (depending on how thick the chicken breast is, the time on each side may take longer).

Corn:

  1. Add water to a large pot and place over high heat.

  2. Once water is boiling, add corn to pot.

  3. Let cook for about 6-10 minutes.

  4. Let cool for 1-2 minutes then slice the corn off the cob. 

Vegetables and bowl assemblage:

  1. On a cutting board, slice the red bell peppers into thin slices.

  2. Chop onion.

  3. Slice avocado and dice into small squares.

  4. Rinse and drain black beans.

  5. In a bowl, add your base: spinach.

  6. In sections add your toppings: corn, onion, pepper, beans, and avocado. 

  7. Slice your chicken and add to the center of the bowl.

  8. Slice lime and chop cilantro and add to the top of your bowl.

  9. Drizzle with barbeque sauce and enjoy!
