QUINOA VEGGIE BOWL
Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Ingredients:
1 tbsp olive oil or olive oil spray
1 zucchini
1 red bell pepper
1 yellow bell pepper
1/2 cup sliced tomatoes
1/2 cup diced carrots
1/4 cup diced onion
1/2 cup chopped broccoli
1/4 cup cauliflower rice
1 - 2 handfuls of spinach
1/2 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
a sprinkle of Trader Joe’s everything but the bagel seasoning
1/2 cup quinoa
1 cup water
balsamic vinegar
Directions:
In a small pot, add 1 cup of water, a dash a salt, and dry quinoa.
Cook quinoa over high heat until its boiling.
Once boiling, lower heat, cover pot, and let simmer for about 15 minutes.
Slice all your vegetables.
Over medium to high heat, spray a large skillet with olive oil spray or add olive oil.
Add your sliced veggies (zucchini, tomatoes, peppers, onion, broccoli, and carrots) and let sauté.
After 1-2 minutes, add cauliflower rice and stir.
Once vegetables look soft, add spinach and let cook.
Add seasoning and pour a splash balsamic vinegar (optional).
Continue stirring until veggies are soft and brown.
Once quinoa is fluffy and there is no water remaining, add quinoa to veggies.
Mix, serve, and enjoy!
Notes:
*you can use any vegetables! this recipe is one of my favorites because I just throw in whatever veggies I have available at the time. Feel free to substitute any of the vegetables listed above.
*you can also add any desired protein: chicken, turkey, or tofu.
