GRILLED CHICKEN TACO BOWL

*makes 2 bowls

Ingredients:

  • 2 boneless, skinless chicken breasts

  • 1/2 cup tomatoes

  • 1/2 cup rinsed and drained black beans

  • 1/2 cup cooked corn

  • 1/2 cup zucchini

  • 1/2 cup onion

  • 2 handfuls of spinach

  • 1 avocado

  • 1 tsp salt

  • 1 tsp pepper

  • 1 tsp garlic powder

  • 1/2 tsp everything but the bagel seasoning

  • 2 tbsp olive oil or olive oil spray

  • lime

  • cilantro

Directions:

  1. Clean chicken breasts and place on a board.

  2. Season chicken breasts with 1/2 tsp salt, pepper, and garlic powder.

  3. Over medium heat, spray a skillet with olive oil or add olive oil.

  4. Add chicken and let cook until brown, flip, and repeat.

  5. On a cutting board, chop zucchini, tomatoes, and onion.

  6. In a separate large skillet, spray with olive oil or add olive oil.

  7. Add chopped vegetables, corn, and beans and let cook for about 2 minutes.

  8. Season vegetables with the remaining salt, pepper, garlic powder, and everything but the bagel seasoning.

  9. Let the vegetables cook until they are tender.

  10. In a bowl, add spinach to the base.

  11. Top spinach with vegetables.

  12. Add chicken.

  13. Top with diced avocado, lime, and cilantro.

  14. Enjoy!
