GRILLED CHICKEN TACO BOWL

*makes 2 bowls
Ingredients:
2 boneless, skinless chicken breasts
1/2 cup tomatoes
1/2 cup rinsed and drained black beans
1/2 cup cooked corn
1/2 cup zucchini
1/2 cup onion
2 handfuls of spinach
1 avocado
1 tsp salt
1 tsp pepper
1 tsp garlic powder
1/2 tsp everything but the bagel seasoning
2 tbsp olive oil or olive oil spray
lime
cilantro
Directions:
Clean chicken breasts and place on a board.
Season chicken breasts with 1/2 tsp salt, pepper, and garlic powder.
Over medium heat, spray a skillet with olive oil or add olive oil.
Add chicken and let cook until brown, flip, and repeat.
On a cutting board, chop zucchini, tomatoes, and onion.
In a separate large skillet, spray with olive oil or add olive oil.
Add chopped vegetables, corn, and beans and let cook for about 2 minutes.
Season vegetables with the remaining salt, pepper, garlic powder, and everything but the bagel seasoning.
Let the vegetables cook until they are tender.
In a bowl, add spinach to the base.
Top spinach with vegetables.
Add chicken.
Top with diced avocado, lime, and cilantro.
