ONE-SKILLET CHICKEN FAJITAS

Prep Time: 5 mins | Cook Time: 40 mins | Total Time: 45 mins

Ingredients:

  • 3 tbsp olive oil, divided

  • 3 garlic cloves, minced

  • 2 poblano chiles, halved, seeded, and cut into thin strips *optional

  • 1 red bell pepper, halved, seeded, and cut into thin strips

  • 1 yellow bell pepper, halved, seeded, and cut into thin strips

  • 1 large white onion, halved lengthwise and thinly sliced

  • 3 tsp kosher salt, divided

  • 1 1/2 tsp black pepper, divided

  • 2 lbs. boneless, skinless chicken breast

  • lime

  • salsa

  • guacamole

Directions:

  1. In a large cast-iron skillet heat 2 tbsp olive oil over high.

  2. Add garlic, chiles, bell peppers, and onion.

  3. Season with 1 1/2 tsp salt and 1 tsp black pepper

  4. Cook, stirring often, until vegetables are soft and lightly charred, about 12 to 15 minutes.

  5. Transfer vegetables onto a plate, set aside.

  6. Do not wipe skillet clean.

  7. Season chicken evenly with remaining 1 1/2 tsp salt and 1/2 tsp pepper.

  8. Heat remaining 1 tbsp olive oil in skillet over high.

  9. Add chicken, and cook until browned, about 12 minutes per side.

  10. Transfer chicken and let rest for 5 minutes, then cut into thin strips.

  11. Do not wipe skillet clean.

  12. Return vegetables into skillet and cook over medium heat, stirring often, for 2 minutes.

  13. Remove from heat, add chicken, and toss together,

  14. Serve with salsa, guacamole, lime, and warm tortillas.

Notes:

*I like to use ready made chicken because it cuts the process time in half!
