“PULLED PORK” SANDWICH MADE WITH JACKFRUIT

*vegan, dairy-free, gluten free

Prep Time: 5 mins | Cook Time: 30 mins | Total Time: 35 mins

Ingredients:

  • 1 can jackfruit

  • 1/2 cup of your favorite bbq sauce

  • 3 tbsp water

  • 1 tbsp olive oil or olive oil spray

  • 2 buns or any type of bread

Directions:

  1. Drain jackfruit and pat dry.

  2. Use a fork to pull apart the jackfruit into smaller pieces (similar to what pulled pork looks like).

  3. Add olive oil to a skillet or spray with olive oil.

  4. Over medium heat, add the jackfruit and cook for 5-7 minutes, continuously stirring.

  5. Add bbq sauce and water and stir until the jackfruit is evenly coated.

  6. Reduce heat to medium-low, cover, and let cook for about 20 minutes.

  7. Once fully cooked, add bbq jackfruit to your choice of bread, add your favorite toppings, and enjoy!

Notes:

  • I ate mine in an Arepa and it was delicious!
