TURKEY BOLOGNESE

Ingredients:
1 - 2 tbsp olive oil
1 lb ground turkey
1 cup onion, diced
3/4 cup carrots, diced
3/4 cup celery, diced
1 tbsp garlic, minced
1/2 tsp salt
1/4 tsp black pepper
1 bay leaf
1/2 tsp thyme
1/4 tsp oregano
1/4 tsp cinnamon
1 - 2 tbsp tomato paste
1 can (14 1/2 oz) crushed tomatoes and the juice
8 oz tomato sauce
8 oz diced tomatoes
1/2 can chicken broth
1 tsp sugar
1/2 cup white wine
1 tbsp butter (I used dairy-free butter)
1/3 cup milk (I used dairy-free milk)
1 tbsp parsley
1 box of spaghetti
Directions:
In a large pot, heat olive oil over high heat and add onions, carrots, and celery and cook until soft (about 5 minutes).
Add garlic, salt, pepper, bay leaf, thyme, oregano, and cinnamon and stir.
Add the ground turkey and cook until no longer pink.
Add tomato paste and let cook for 1-2 minutes.
Add wine, stir and let cook for about 2 minutes.
After half the liquid is evaporated, add crushed and diced tomatoes, tomato sauce, broth, and sugar.
Reduce heat to medium low and cook until sauce thickens. Stirring occasionally.
Cook for about 1 1/2 hours.
Add milk, butter, and parsley then stir for about 2 minutes over high heat.
Discard bay leaf.
Cook spaghetti, serve with sauce and cheese, if desired.
