TURKEY TACO BOWL
*makes about 4 bowls
Prep Time: 5 mins | Cook Time: 20 mins | Total Time: 30 mins
Ingredients:
1LB ground turkey meat (you can use chicken or beef)
3 tbsp olive oil or olive oil spray
1/2 red onion, chopped
1 red pepper, chopped
1 avocado
cherry tomatoes
1 16 ounce can black beans
1 packet of taco seasoning
2/3 cup water
Spinach or any type of lettuce for your base
1 clove garlic, chopped
1 tbsp chopped fresh cilantro + extra for topping your bowl
1/4 tsp cayenne pepper
1/4 tsp pepper
1/2 tsp salt
1/2 tsp garlic powder
Directions:
Taco Meat
In a large skillet over medium-high heat, add 1 tbsp olive oil or spray with olive oil.
Add taco meat and cook until brown.
When meat is fully cooked, add in taco seasoning and 2/3 cup of water.
Stir until well combined and let meat cook on simmer for about 5 minutes.
Beans
In a medium sauce pan over high heat, add 1 tbsp olive oil or spray with olive oil spray.
Add black beans (do not drain the can) and garlic. Let boil.
Once boiling, reduce heat to medium-low. Season with cilantro, cayenne pepper, and 1/4 tsp salt.
Let simmer for about 5 minutes.
Sautéed vegetables
Chop 1/2 red onion and 1 red pepper.
Over medium-high heat, add olive oil or spray skillet with olive oil.
Add in chopped vegetables. Season with remaining salt, pepper, and garlic powder and stir continuously.
Sauté vegetables until they are soft.
Bowl Assembly
In your bowl, add your base - I used spinach.
Chop tomato and slice avocado.
Top lettuce/spinach with taco meat, beans, sautéed vegetables, avocado, and tomato.
Sprinkle cilantro and enjoy!
