GREEK SALAD

Prep Time: 5 mins | Cook Time: 5 mins | Total Time: 10 mins

*makes 4 bowls

Ingredients:

For the salad:

  • 2 cups mixed lettuce

  • 1/2 cup cucumber, sliced

  • 1/2 cup cherry tomatoes, sliced

  • 1/4 cup red onion, thinly sliced

  • 1/2 cup kalamata olives, halved

  • 1/4 cup crumbled feta

  • 1/4 cup radishes, sliced

For the dressing:

  • 2 tbsp red wine vinegar

  • juice of 1/2 a lemon

  • 1 tsp dried oregano

  • salt n pepper to taste

  • 1/4 cup extra virgin olive oil

Directions:

  1. On a cutting board, slice vegetables.

  2. In a large bowl, add lettuce, tomatoes, cucumber, olives, red onion, and radishes.

  3. Crumble and sprinkle on the feta.

  4. In a small bowl, make your dressing.

  5. Combine vinegar, lemon juice, oregano, salt, and pepper. Mix and slowly add olive oil.

  6. Whisk together and then drizzle over salad.

  7. Enjoy!
